Pancakes for lunch



Made these delicious pancakes for lunch today and it´s among the tastiest pancakes I've ever tasted. So I figured I'd share the recipe with you. Here we go:

                           

                            Pancakes     For 2 pers. 

2 eggs
1/2 - 1 cups rice milk
2 1/2 cups almond flour
2 teaspoons baking powder
1 tablespoon honey
2 tbsp coconut oil (for frying)

Lime Yoghurt

2 cups soya yoghurt
Peel and juice from half a lime

Mix all ingredients in a bowl and fry them for a few minutes on each side. I ate them with lime yogurt, berries and a little syrup.
